WHere is an easy version of a beverage found on a new cocktail list. It's a large-volume pre-mixed that's loaded with the flavours of a Christmas time, which makes it excellent for hosting a celebration. Any leftover cordial for brunch beverages, desserts, or for more rounds of bikinis.
Bikini Recipe
Makes enough for 10 servings
To make the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Drink (produces 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch
Method
Making the Syrup: Put the listed items in a saucepan, bring to a light boil, mixing so the sugar melts. Next, take off the stove and let it to cool down completely. Pour into a sealable bottle, close it and refrigerate it chilled, where it will keep for about a month.
Preparing the Premix: Combine every liquids into a large bottle, let it rest for 60 minutes, then filter it , ideally through muslin, making it completely strained.
For serving: Pour 85ml of the batch mix into your stirring glass containing ice, and agitate gently for one minute to chill. Filter into a chilled martini glass or equivalent, decorate with the cranberries and complete it with a light spray with the mandarin essence above the glass.
